There isn't anyway to stop someone tracking your phone if it's switched on, however, they would have to firstly, obtain your mobile number and in turn your phone's IMEI number. Switching your phone off or being in an area where you have no signal is 100% effective in hiding from the trackers. No signal = no trace.
